Kueh Bangkit recipe !!

Heiii ....How are you guys ?? sorry sorry soorry, its been more than 3 weeks i never update my blog. there are tooooo many many things happen to me out there. mainly is about job hunting. has been hunting so much, but ...........yeahhh !! super stressful !

During these three weeks ive done many many things, i did hair updo for my dad cousin(uncle) wedding but now ive a very short hair. haha. everyone said i look tomboy !hmmm...not that bad right ?? i was a tomboy girl before. hahaha. surprisingly i love baking n diy. i think need to thank to my beloved mommy, that she is great at baking n diy too.

for the past few weeks, my dear bf has been acc me almost everyday, we went out for picnic, went for "the Fray" concert, and steamboat with bf friends and of cos are my friends too. the concert is really great but its too loud !!ive tried black beer and it taste sooo bitter and my dearest boyfie said i drunk. well, i guess i am cos i forgot mostly what i said. dangerous huh !

KKie ! so today i will share about "Kueh Bangkit Recipe" . some of you probably dunno what it is. its a coconut cookies, i think is from malay or chinese, i dont know. i know that its crispy and melted straight away when you bite it into your mouth. mostly they will sell it during malay new year or Chinese new year. so i guess, its maybe from paranakan or baba/nonya family :)

okay forget about where its come from, i just guess. as long as the cookies is nice. so i will try it out !!! okay, should be me and my mom try it out !!!

Kueh Bangkit Recipe :
- 1kg Tapioca flour
- some pandan leaves
- 2tsp salt
- 6 egg yolks
- 350g granulated sugar
- 500g fresh coconut milk (without water)

step-by-step :
- wash clean the pandan leaves and dry them
- dry-fry the tapioca flour with some pandan leaves with low fire until its light and fluffy and the pandan leaves dry and abit curl.
- set aside the flour, cool it into room temperature and sieve it before use.
- boil the coconut milk with salt, some pandan leaves and 320g sugar ( left 30g sugar will be used in egg yolks). boil with care and low fire, do not over boil. when the sugar are dissolved, off the fire. set aside and let it cool.
- beat egg yolks with 30g sugar until sugar are perfectly dissolved and the yolks are creamy and fluffy.
- add cool coconut milk and flour into the yolks, stir carefully as the flour will fly and mess all your kitchen.
- add the flour slowly, as the dough shouldnt be too wet or dry.
- set aside the dough and cover it for 10 minutes before cut out with cookie cutter.
- bake in preheated oven 160C for 15 mins.
