Japanese Cottony Cheesecake !

Japanese Cottony Cheesecake
Heii guys. Today i baked Japanese cotton cheese cake. It is so different with the last one (failed cheddar cheese cake). This cake made from cream cheese and it is so amazing delicious. Its melted straight away in your mouth when you bite it. Yummy ~~
This is my first time baking cottony cheese cake and turn out pretty good, although it shrink a little bit :( but still not disappointing !
Inside the cake is so soft and spongy, regardless of bad cutting. Ough ! that's because of my knife not sharp. and its too late to realized :(:(:( please ignore it . hehe
I found this recipe at Little Teochew which it stated that the original recipe is from Diana's Dessert :) . I really hope one day I could be as great as them :)hehehe

Japanese Cottony Cheesecake Recipe :
Ingredient A
250g cream cheese
100ml milk
50g Butter

Ingredient B
6 eggs yolks
60g all purpose flour
20g corn flour
1/4 tsp salt

Ingredient C
6 eggs whites
140g granulated sugar
1/4 tsp cream of tartar

Step-by-step :
1. Prepare Springform baking tray lining with baking paper. Cut baking paper higher than the tray around 1.5 inches to prevent cake pour out when its rising.
2. Fold aluminium foil surrounding the bottom and side of the tray and prepare one 8" square aluminium foil to cover the top of the tray.
3. Melt cream cheese, butter and milk with double boiler, leave it cool and sieve it after that.
4. Mix melted ingredient A with beaten egg yolks, followed by cake flour, corn flour and salt. Sieve it again.
(sieve batter is a need in order to prevent lumps in the cake. I want my cake to be mixed evenly and have soft cotton effect, not lumpy)
5. Preheat oven in 160C with water bath. Prepared water bath with 4 egg tarts mould filling with water, put it at each corner of the oven.
6. Whisk egg whites with cream of tar tar until foamy. Add in sugar slowly and whisk until soft peaks form. Turn the egg whites bowl into upside down, if it doesnt move, means its ready.
7. Add 1/3 of eggs whites into cream cheese mixture, fold well. When all egg whites well combined, add another 1/3 of eggs whites and repeat it.
8. Pour batter into 8" prepared baking tray. Cover with 8" aluminium foil on top.
9. Bake for 1 hour, take away aluminium foil on top and bake another 10 minutes until top of the cake get brown.
10. Turn off the power, and let the cake cool inside the oven with door open slightly ajar.



Space to improve :
1. of course, I need to get sharper knife. hahas !
2. While folding the egg whites, must be clock wise to the center, to press out all the air inside which resulting big bubbles. (my cake is soft enough but still not smooth enough as in the bubble shown in the picture)
3. Find out why my cake is shrinking down. maybe something to do with the water bath or the way of colling down.

Jelly Recipe

Failed Cheddar Cheese Cake
I was saying that im gonna back Cheddar Cheesecake. But, very paiseh that i failed it :( above picture are my failed cheesecake. the taste is still okay, acceptable. There are notes that I would like to share why my cheese cake was failed.
- Wrong way to melt cheese tgt with milk and butter
(cheese is not completely melt)
(causing  cheese sinking down apart from the batter )
- Egg whites rest too long, causes the cake not raise up

Jelly Powder

So, today is a hot day. Im gg to make jelly to freshen up. I got some kiwi and oranges in my fridge, so im gg to make Kiwi and Oranges Jelly.


Recipe for Kiwi Jelly :
  1 Pkt of Double Swallow Sun Jelly Powder
3 1/2 Cup Water
 1/2 Cup Sugar ( I do not like too sweet )
1 Tablespoon Condensed milk
3 Kiwi

How to make :
- Peel Kiwi and cut into cubes, put into jelly glasses
- Pour water into boiling pan together with Jelly powder and sugar, stir before start fire
- After Jelly powder dismissed into the water, boil it for 3 minutes
- Turn off fire and sit for 1 minute until all bubbles are dismissed
- Pour 3/4 Jelly into jelly glasses with Kiwi, and sit for 5 minutes
- Start fire on the rest 1/4 jelly and melt it, add condensed milk inside
- sit for 1 minute and pour on top of first jelly
- Rest Jelly until cool and put into fridges (it taste better when its cool)

Recipe for Oranges Jelly:
1 Pkt of Double Swallow Sun Jelly Powder
3 Cup Water
1/2 Cup Sugar ( I do not like too sweet )

2 Oranges juice with the flesh

How to make :
- Cut Oranges into two, use spoon to scoop out Oranges juice together with its flesh
- Pour water into boiling pan together with Jelly powder and sugar, stir before start fire
- After Jelly powder dismissed into the water, boil it for 3 minutes
- Turn off fire, add oranges juice with the flesh and sit for 1 minute until all bubbles are dismissed
- Pour Jelly into jelly glasses
- Rest Jelly until cool and put into fridges (it taste better when its cool)

Mashed Potato

The weather recently is not good :( everyone is falling sick. me too !! ive got sore throat and it really affecting my meals. i skipped my lunch n dinner for alot alot of times cos ive no appetite. RESULTING IN OVER UNDERWEIGHT !!! yeah i alrd underweight before sick, and now i look terribly skinny. before sick i was about 38kg and my height is about 150cm (shorty !) and after sick, i guess i left maybe 37kg ?

So yesterday night i went to Google searching weight gain in one week and it stated that ideal way to gain weight only 0.5kg per week. so, my target is 42kg, 4 more kg in two months (doctor said my ideal weight is 45kg- but i think i will look v fat). and they teach us what food to eat, mostly is about eat more food that contain alot protein like egg, meat, fish and so on. Ive also read that I need to eat more starchy food like potato.

Then today ive eaten my lunch with tofu and fish and another veggie :) and for my late lunch, ive made myself a bowl of mashed potato !!!


Mashed Potato Sprinkled with Pepper

Here are the recipe of easiest mashed potato !

2 large Russet Potatoes
1 tablespoon Butter
1/4 cup Milk
1/4 teaspoon salt
Pepper for sprinkle

How to do :
1. Wash clean the potatoes and peel of the skin and cut into 4 cubes
2. Steam potatoes until the potatoes are soft (try to break it with fork)
3. After the potatoes are cook and soft, move into a tray with holes and dry it (do not use tissue)
4.  Mashed potatoes with wood spoon or over a net if you do not have potato masher
5. Melt butter with milk in low fire
6. Add mashed potato into shimmering butter and milk
7. Add salt and stir into dry and creamy starch
8. Move into a bowl and sprinkle with some paper

Kueh Bangkit recipe !!

Heiii ....How are you guys ?? sorry sorry soorry, its been more than 3 weeks i never update my blog. there are tooooo many many things happen to me out there. mainly is about job hunting. has been hunting so much, but ...........yeahhh !! super stressful !

During these three weeks ive done many many things, i did hair updo for my dad cousin(uncle) wedding but now ive a very short hair. haha. everyone said i look tomboy !hmmm...not that bad right ?? i was a tomboy girl before. hahaha. surprisingly i love baking n diy. i think need to thank to my beloved mommy, that she is great at baking n diy too.

for the past few weeks, my dear bf has been acc me almost everyday, we went out for picnic, went for "the Fray" concert, and steamboat with bf friends and of cos are my friends too. the concert is really great but its too loud !!ive tried black beer and it taste sooo bitter and my dearest boyfie said i drunk. well, i guess i am cos i forgot mostly what i said. dangerous huh !

KKie ! so today i will share about "Kueh Bangkit Recipe" . some of you probably dunno what it is. its a coconut cookies, i think is from malay or chinese, i dont know. i know that its crispy and melted straight away when you bite it into your mouth. mostly they will sell it during malay new year or Chinese new year. so i guess, its maybe from paranakan or baba/nonya family :)

okay forget about where its come from, i just guess. as long as the cookies is nice. so i will try it out !!! okay, should be me and my mom try it out !!!

Kueh Bangkit Recipe :
- 1kg Tapioca flour
- some pandan leaves
- 2tsp salt
- 6 egg yolks
- 350g granulated sugar
- 500g fresh coconut milk (without water)

step-by-step :
- wash clean the pandan leaves and dry them
- dry-fry the tapioca flour with some pandan leaves with low fire until its light and fluffy and the pandan leaves dry and abit curl.
- set aside the flour, cool it into room temperature and sieve it before use.
- boil the coconut milk with salt, some pandan leaves and 320g sugar ( left 30g sugar will be used in egg yolks). boil with care and low fire, do not over boil. when the sugar are dissolved, off the fire. set aside and let it cool.
- beat egg yolks with 30g sugar until sugar are perfectly dissolved and the yolks are creamy and fluffy.
- add cool coconut milk and flour into the yolks, stir carefully as the flour will fly and mess all your kitchen.
- add the flour slowly, as the dough shouldnt be too wet or dry.
- set aside the dough and cover it for 10 minutes before cut out with cookie cutter.
- bake in preheated oven 160C for 15 mins.

Recipes : Chocolate Truffles & Tequila Chocolate Truffles

Heii.. today wanted to share my truffles recipe to you guys :)
Its my first time to do it, so, looks abit weird, but my dad n mom said it nice, and they pack few pieces to my uncles who volunteer his tequilla for me :) thanks uncle :*
Okay, so i was wanted to make truffles for my boyfriend's birthday gift. i was searching and searching for the recipe and it suggest to put alcohol into it. but i have no idea about alcohol thingy cos i dont drink (so good girl^.^). i went to a duty free shop and founded actually alchohol is so expensive -.-" so i went to my uncle house to get it for free :D:D:D

I have made two kind of truffles, which is traditional truffles with choco powder coating and tequila chocolate truffles.




It is pretty easy to make, but will make ur time to clean is, cos u will be kinda messy trust me. here is my recipe of my truffles !

Chocolate truffles recipe in grams

ganache: 
227 grams         Semi-Sweet chocolate, chop into small pieces
120 ml              Non diary whipping cream
2     tbs             Unsalted Butter
4     tbs             Tequila, alcohol

Coating:
Chocolate powder and melting chocolate

Step by step:
1. Finely chop chocolate into small pieces in order to melt it evenly, set aside in non stick bowl
2. Cook non diary whipping cream with butter with small fire until it start to bubble at the side and butter melted is enough. DO NOT cook it too long, we do not want to cook it.
3. Pour cream and butter into the chocolate and let it stay for a minute to melt the chocolate, and stir with spatula. It become ganaches :)
(optional)
4. devide the ganaches into two bowl. one is without alcohol, traditional truffles.
5. Pour tequila into the second bowl and mix well. (note: I put more alcohol as the tequila my uncle give is too long, thus i put more, this will cause the ganaches too soft. 2 tbs is recommended)
6. Cover ganached with tight plastic and refrigirated for at least 2 hours, best is overnight.
7. Ater the ganaches firm enough, scoop with spoon and roll is like a ball. After that refrigirate for 30 minutes before coating.
8. While waiting, prepared the cocoa powder and melt chocolate for coating.

Note :
- I choose melt chocolate for my tequila truffles as it too soft, but it give best effect cause the runny ganached wont melt away when set in room temperature.
- While melting the chocolate coating, make sure its not over cook with high temperature. Melt it with shimmering water with double boiler, and make sure the water remain hot or else the chocolate will get harden and its a waste
- If the melted chocolated harden or siezed, DO NOT throw away. Keep it for next baking ingredients like Cupcakes and so on.
- If ganached is failed. DO NOT throw away, could jam it to bread or cookies like Nuttela :)

Ive been thinking and thinking all over again. Have been talking the same thing with my partner all over again. I am thinking and talking about what to write on my blog ? how to make my blog useful. oh no.............struggling >,<

But now i know :D wink ^.~

I will start to blog about diy thingy, and tutorials, and recipes, and travelling, and i think thats all i can think now. hahas !! i think it would be a very very special blog about :D:D excited yeah.

anyway, i will start to label it, so u guys will get easier to get what u guys wanted to read :) see. im so sweet :).

Batam : Day 2

Okie, so this is about day 2 batam trip. hehehee
we wanted to go for karting, but it was raining :(
wanted to go for seafood, but my bro and dad dont wanna go :(
so, me and Casey boyfie go for steak :D:D:D

We went to Grill Factory Batam located at Nagoya. I can only say that its awesome, at Batam can eat so yummy steaks. I strongly recommend you guys go there, best if at night i guess.
The atmosphere just to warm and the staff are friendly. they can speak english too. hehehehe
